ITALIAN CHICKEN MOZZARELLA TACOS
500 cals / 49g protein / 19g fat / 36g carbs
SERVES 1 (2 tacos):
100g chicken mince
1/2 tsp oregano
1/2 tsp garlic powder
Salt/peps
2 small tortillas
1/4 small onion, finely diced
100g Passata
1/2 tbsp tomato puree
1/2 tbsp honey
50g mozarella
10g Parmesan
Drizzle of balsamic glaze
Rocket
TO MAKE:
1. Fry the onions until brown & soft, then add in passata, tomato puree & honey and stir.
2. Mix in a bowl the chicken mince, orenmgano, garlic powder & salt/peps - split the mixture in half for each other the tortillas.
3. Squash the mixture down and pan fry face down for a few mins. Then flip over, take off heat add the sauce and mozzarella and Parmesan, add back int he heat with a lid on for 30 secs to melt.
4. Top with rocket & a drizzle of balsamic glaze and enjoyyyy!
Cheesy Garlic Bread
2 Low-Carb Tortillas (e.g., from @missionfoodsus)
2 oz Cream Cheese
1/2 Cup Shredded Mozzarella
2 tbsp Melted Butter
1 tsp Garlic
Minced 1 tsp Chopped Parsley
How to Make It:
1️⃣ Spread cream cheese on one tortilla and top with half the mozzarella, then place the second tortilla on top.
2️⃣ Stir melted butter with minced garlic and parsley, then brush both sides of the tortillas.
3️⃣ Sprinkle on the remaining mozzarella and air fry at 380°F for 8–10 minutes until golden and bubbly.
4️⃣ Slice, drizzle extra garlic butter
